Curry is the favourite dish of us Brits, even beating fish n chips. But why is a good curry so very tasty? Now scientists have figures out why.

Researchers at the Indian Institute of Technology looked at over 2,000 curry dishes taken from website TalaDalal.com, which is India’s number 1 food site. They broke the recipes down to their individual ingredients to try and work out why curry is so very delicious.

They discovered that the secret is all about flavour combinations – or rather, the lack of them. In many Western cuisines, ingredients are usually paired together when they share similar flavours. But ingredients in curries don’t share flavour compounds very often, and every spice is “uniquely placed in its recipe to shape the flavour-sharing pattern with the rest of the ingredients, and is sensitive to replacement even with other spices.”

Common ingredients in a curry, such as cayenne, coriander and garam masala all have subtle molecular differences so act independently of each other. This “negative ingredient pairing” adds layers of flavour to the finished dish.

So it’s the way the different flavours conflict, and the way all the components have a unique flavour, which combine to make a complex, nuanced dish. And that’s why curry is so yummy.
